Hokshuns: Kashmir’s preserved dry vegetables
Hokshuns literally meaning dry vegetables in Kashmiri, are part of the diet of general household in Kashmir. With the onset of winter, demand for dry vegetables increases in Jammu and Kashmir. Hokshuns are indigenously dried and preserved vegetables which include brinjals, gourds, turnips, spinach and even tomatoes produced locally during summers.
